How to Make Black Garlic at Home? The Complete Fermentation Guide

To make black garlic, whole garlic bulbs must be placed in a temperature- and humidity-controlled environment for several days. This slow maturation process gradually transforms the natural sugars and amino acids in the garlic, giving it its black color, soft texture, and distinctive flavor.

A black garlic fermenter automatically maintains these conditions throughout the entire cycle, making preparation much easier.

Table: the main stages of black garlic production

Stage What happens Objective
Garlic selection Choose firm, intact garlic bulbs. Achieve even fermentation.
Starting fermentation The garlic is placed in a warm, humid environment. Start the maturation process.
Gradual transformation The color, texture, and aromas develop slowly. Form black garlic.
End of the cycle The garlic becomes black, tender, and sweeter. Obtain a product ready to eat.
Storage The garlic is stored in suitable conditions. Preserve its quality for longer.

What is black garlic?

Black garlic is made from regular white garlic that undergoes a long maturation process under carefully controlled conditions. Over several days, the cloves gradually change appearance: they turn black, become softer, and develop a much milder flavor than fresh garlic.

This transformation does not involve adding any ingredients or colorings. It is the result of a natural process caused by maintaining a stable temperature for an extended period.

Fermentation or maturation: what is the difference?

Black garlic is often described as fermented garlic. However, from a culinary perspective, it is more accurately a controlled maturation process than lactic fermentation, such as that used to make yogurt or fermented vegetables.

Under gentle, constant heat, the compounds naturally present in garlic gradually change. This transformation alters its color, texture, and flavor without traditional cooking.

This is why a device capable of automatically maintaining a stable temperature for several days is particularly well suited to this preparation.

Why does garlic turn black?

During maturation, the natural sugars and amino acids in the cloves gradually react with each other. This transformation causes a slow browning that becomes increasingly pronounced over time.

At the same time, the texture also changes: the cloves lose their crunch and become tender and soft, while their flavor becomes rounder, with notes sometimes reminiscent of balsamic vinegar, dried fruit, or caramel.

Why make your own black garlic at home?

Making your own black garlic allows you to control the entire maturation process and produce several bulbs at once according to your needs.

  • Discover an original culinary technique.
  • Prepare your black garlic at your own pace.
  • Control the maturation conditions.
  • Have an ingredient ready to use in many recipes.
  • Try a preparation rarely made at home.

What conditions are needed to make successful black garlic?

Successful black garlic depends mainly on three factors: a stable temperature, controlled humidity, and a sufficiently long maturation period. If any of these elements fluctuates significantly during the process, the final result may be uneven.

Unlike traditional cooking, the goal is not to cook the garlic quickly but to create a consistent environment for several days to allow it to transform gradually.

Parameter Why it is important
Constant temperature Ensures even maturation throughout the entire cycle.
Controlled humidity Prevents the garlic from drying out too quickly.
Sufficient time The transformation takes several days to complete.
Good-quality garlic Healthy bulbs generally produce more even results.

What garlic should you choose to make black garlic?

Not all garlic bulbs necessarily produce the same result. To achieve even maturation, it is best to select well-formed, firm bulbs with no signs of mold or spoilage.

The fresher the garlic is at the start, the more even the transformation will be throughout the cycle.

Before you start, check that your garlic bulbs:

  • are completely dry;
  • have tightly closed cloves;
  • do not have any damaged areas;
  • are relatively uniform in size if several bulbs are fermented together.

Can you make black garlic without a specialized device?

You can find various methods online using a rice cooker, slow cooker, or other repurposed devices. However, these solutions do not always maintain perfectly stable conditions for several days.

Black garlic maturation requires precise temperature control over an extended period. Significant fluctuations can alter the final texture or make the result uneven.

A black garlic fermenter is specially designed to automatically maintain the necessary parameters throughout the entire cycle without daily intervention.

Why use a black garlic fermenter?

The main advantage of a dedicated device is that it automates a preparation that takes several days. Once the garlic bulbs are placed inside and the program is started, the fermenter maintains the appropriate conditions until maturation is complete.

Without a dedicated device With a black garlic fermenter
Temperature may fluctuate. Temperature is maintained automatically.
Requires more monitoring. Operates autonomously.
Results may vary from one batch to the next. More even maturation.
Uses devices not intended for this purpose. Equipment designed for maturing garlic.

How long does it take to make black garlic?

Black garlic maturation takes much longer than most culinary preparations. Depending on the devices and settings used, the process can take several days before the transformation is complete.

It is important to let the cycle finish completely so that all the cloves develop evenly.

Stopping the maturation too early can result in an uneven product with cloves that are still light or have an underdeveloped texture.

The most common mistakes when making black garlic

Even though the preparation is largely automated with a suitable device, certain mistakes can affect the final result. Knowing them can help you achieve more even maturation from the very first batch.

Using poor-quality garlic

Garlic bulbs that are already damaged, damp, or show signs of mold will generally not produce satisfactory results. The quality of the starting garlic remains one of the most important factors.

Stopping the cycle before it is finished

Black garlic maturation takes time. Opening the device regularly or stopping the program too early can prevent the cloves from achieving their final texture and color.

Mixing bulbs of very different sizes

When some bulbs are much larger than others, they may not develop evenly. Choosing bulbs of similar size makes maturation more even.

Storing the garlic improperly after maturation

Once the cycle is complete, the black garlic must be stored in suitable conditions to preserve its texture and flavor.

How to store homemade black garlic?

After maturation, black garlic can be stored in a clean, sealed container placed in a suitable environment. Proper storage helps preserve its soft texture and aromas for longer.

Best practice Why?
Use an airtight container Protects the garlic from external moisture.
Handle with clean hands Reduces unnecessary contamination.
Avoid high temperatures Helps preserve the quality of the product.
Prepare several bulbs at once Makes the most of each maturation cycle.

How to use black garlic in cooking?

Thanks to its soft texture and milder flavor than fresh garlic, black garlic is easy to incorporate into many preparations.

  • Crushed into a purée or sauce.
  • Added to a homemade vinaigrette.
  • Mixed into flavored butter.
  • Served with roasted vegetables.
  • Used to season meat or fish.
  • Mixed into pasta or risotto.

FAQ: frequently asked questions about black garlic

How long does it take to make black garlic?

The duration depends on the equipment used. With a domestic black garlic fermenter, a cycle generally takes between 12 and 15 days. Some artisanal methods may take longer. To obtain even black garlic, it is recommended to let the program complete fully.

What variety of garlic should you choose to make black garlic?

The best choice is good-quality white garlic with firm, dry bulbs and no signs of mold. The cloves should be well-developed to achieve even maturation. It is also advisable to use bulbs of similar size when fermenting them together.

Can you make black garlic with already peeled cloves?

No. The garlic bulbs must remain whole with their outer skin. This naturally protects the cloves throughout maturation and helps prevent them from drying out.

Why does my black garlic remain brown instead of turning black?

Incomplete coloring is generally due to maturation being stopped too early or to insufficiently stable temperature conditions. To obtain completely black garlic, it is important to follow the full cycle duration.

How many garlic bulbs can you put in a 5-liter fermenter?

A 5-liter black garlic fermenter can hold up to about 2 kg of garlic, or generally 15 to 25 bulbs, depending on their size. It is best not to pack them too tightly to promote even heat distribution.

Can you open the fermenter during maturation?

It is best to avoid opening the device during the cycle. Each opening causes a temperature fluctuation that can slow maturation or make the result less even.

Why is black garlic much milder than white garlic?

During maturation, the compounds naturally present in garlic gradually change. Its flavor becomes rounder and milder, with notes that can be reminiscent of caramel, balsamic vinegar, dried fruit, or even licorice.

Does a black garlic fermenter consume a lot of electricity?

No. Even though maturation takes several days, a 90 W domestic model remains relatively economical. Its total consumption is comparable to that of a small household appliance used regularly.

Can you use a rice cooker to make black garlic?

Some people use a rice cooker, but this type of device is not designed to maintain a perfectly stable temperature for nearly two weeks. A dedicated fermenter generally produces much more even results.

How do you know if the black garlic is successful?

Well-matured black garlic has completely black, soft, and slightly tender cloves. Its flavor is much milder than that of fresh garlic and develops complex aromas reminiscent of balsamic vinegar, prunes, or dried fruit.

Should you add water to the fermenter?

No. With a suitable black garlic fermenter, it is not necessary to add water. The device is designed to maintain the necessary humidity during maturation.

Bonjour,
